By Frank Green

Throughout the decades since the country's founding, millions of immigrants have come to America. Many of them did not leave behind what they knew and found familiar, however. They brought with them aspects from their culture including foods that they consumed on a regular basis. This is no exception for people who came to the U. S. From Mexico. They also took with them recipes that would soon become part of everyday American culture. These dishes now are commonplace to Pomona Mexican food.

As most people will find, making many of the recipes is not difficult. In fact, many of them use common base ingredients like the tortilla. The tortilla can be made from either ground corn or white flour. The dough is not all that different from bread dough and is called masa. The masa is formed into balls before being rolled out thin. The tortillas are then baked or fried.

Tortillas are versatile and can be used to make a number of different dishes including burritos. Many Americans know what burritos are because of how commonplace this dish has become to American culture. It is made from a white flour tortilla that is filled with beans, meat, cheese, onions, and more.

Enchiladas are another dish that is popular with Americans. Also made from white flour tortillas, they are filled with ingredients like cheese, meat, and chicken. They are covered with a sauce made out of red chili and then topped with shredded cheese. The entire dish is baked and then served hot.

Beans are another staple of fare from this country. People who make dishes use either pinto or black beans. They mash them to make a dish called refried beans. Refried beans can be topped with cheese, picante sauce, and onions to add extra flavor. They also are used as fillings for burritos and enchiladas.

As in many countries, rice is also important to cuisine from Mexico. Long grain brown or white rice is boiled before being combined with ingredients like tomatoes, picante sauce, cheese, peppers, and onions. This fare is called Spanish rice. It likewise sometimes is used as a filling. It also may be served up as a side dish to main entrees.

What would any meal be without dessert? Mexico residents brought with them a recipe called fried ice cream. Despite its name, it is not really fried, however. It is served on top of a tortilla that is covered in cinnamon and sugar. It also is covered with caramel sauce, more cinnamon, and whipped cream. Many people prefer to share it because of how sweet it is. Flan is also another sweet dessert from the country.

The variations of Mexican food might surprise you. Many of the most common dishes are already a part of the standard American diet. People consume them on a frequent basis. You could find this fare at restaurants that specialize in this type of fare. Likewise, you have the option of cooking and serving it up to your family at home.
