Here are some simple to prepare but really tasty Latin American cooking recipes to make in your own kitchen.

Brazilian empanadas are very popular, and it isn't complicated to make them. You need three cups of flour, some salt, one small spoon of turmeric, ten tablespoons of butter, six tablespoons of shortening, one egg and one half cup of beer for the dough. First you have to mix dry ingredients with butter, and then you have to add the egg and the beer, and leave the dough to rest.

For the filling, you need to saute one small diced onion with two diced tomatoes and one can of hearts of palms in two tablespoons of butter. Pour in two spoons of Sherry and add one tablespoon of tomato paste. After two minutes, add half pound of cleaned and diced shrimps. Season it with salt and freshly ground pepper.

Flatten the dough into rounds, maybe three inches in diameter, and add a spoon of filling on each round. Brush edges with egg yolk, fold every piece in half and use a fork to seal the edges. Fry your empanadas in deep oil for four minutes. Oil should be on 190 degrees of Celsius.

There are so many varieties of famous Cuban sandwiches. Although, today is quite common to put salad, mayonnaise or even ketchup in there. In fact, real ones are much simpler. Traditional recipe contains four slices of ham and roast pork, three slices of cheese, Cuban bread with hard crust, yellow mustard and pickle slices. French bread can be used instead, if you cannot find Cuban bread.

Tasty and creamy coconut rice is another popular dish you can easily prepare. You will need some long grain rice, the same amount of water and coconut milk, sugar, a little bit of salt, raisins and crispy coconut flakes. Coconut flakes are best when toasted.

Mix together sugar, salt, rice, water and coconut milk. Stir occasionally until water evaporates. Set on the lowest temperature, cover the saucepan and continue cooking for another twenty minutes. Use a fork to mix in raisins, remove from the heat and leave it rest for a while. Sprinkle with coconut flakes and serve hot or cold.

Churro, or Spanish doughnut, is widely popular snack. It is easy to prepare and really tasty. There are numerous recipes for preparing it, and here is one of them. You will need two cups of flour, some salt, three or four tablespoons of sugar and the same amount of vegetable oil for the dough.

Cook sugar, salt and oil in two cups of water. Remove from heat and stir in flour, until the ball of dough is formed. Make strips of the dough using your pastry bag, and deep fry until golden. Mix one cup of sugar with cinnamon and roll drained churros in this mixture. You will positively enjoy in these simple snacks.
